1) Peel, core, and slice the apples into wedges.
2) Mix together the flour, sugar, cinnamon, salt and nutmeg (if used).
3) Toss the apples in the flour/sugar/spice mixture completely coating.
4) Press one crust into the bottom of a 9 inch pie pan.
5) Add the tossed apples. Add the small butter pieces on top of the apples.
6) Enclose the apples with the second pie crust. Press the edge closed and shape as desired.
1) Preheat the oven to 450 degrees.
2) Cut slits in the pie crust to allow steam to vent, then bake for 20 minutes at 450 degrees.
3) After 20 minutes, reduce the oven temperature to 375 degrees and bake for an additional 50-60 minutes. The pie is done when the crust looks golden and delicious.
